Delicious Keto Low-carb Pumpkin Muffin Recipe

Ingredients

  • 1/2 cup almond flour
  • 1/2 cup coconut flour
  • 2/3 cup monk fruit sweetener
  • 1 tbsp baking powder
  • 1 tbsp pumpkin pie spice
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 4 eggs
  • 3/4 cup pumpkin puree
  • 2 tbsp melted butter or ghee
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350º F.

  2. Mix dry ingredients and then add wet ingredients and mix well.

  3. Fill muffin cups 3/4 way and bake 25 minutes. Cool for 10+ minutes and enjoy!

  4. Only 3.7 net carbs and 98 calories per muffin!

Optional add-ins:
