Lemons are so lovely, aren’t they?!  On a table, on a print, in a recipe…I just adore them.  I decided to set a lovely little lemon tablescape for my little family of four while it’s still summer.  This can very well take you into the fall and even be used at spring!

It all started with our usual Saturday trip to the local Farmers Market when I found this gorgeous flower farmer and these bright yellow blooms.  I hand picked a few different stems and asked them to put a bouquet together instead of pink roses or peonies or something I would usual buy.

I also picked up some lemons for my lemon curd parfait recipe and my homemade pink lemonade recipe and set most of them aside.  I sliced up a few for garnish and drinks.  I also pulled out the lemon napkins I bought earlier this spring that I used to serve my luscious lemon curd parfaits but I also wanted to use them for this tablescape.

This was such a simple tablescape to throw together and you can do it too!  You can pull out a white tablecloth if you’d like.  I pulled out these darling ruffle table runners that I already had and placed them across the table as shown.

I used these cute little faux lemons from a lemon stem I bought and also used for my pink lemonade outdoor tablescape for some girlfriends.  I loved getting more use out of them. They can also be put in a small bowl or apothecary jar for decor.

I already had these lovely chargers, gold flatware, goblets.

The lovely flowers and adorable lemons and napkins really stole the show but everything was so simple.  I made some lemonade and sliced the lemons for additional flavor or garnish.

With all of the beautiful sunlight coming in from our windows, it just made such a lovely and cheerful tablescape that took no time at all to put together!

You know I’m a pink girl and always have some pink in my kitchen but this yellow has been such a beautiful way to change things up and has brought such a smile to my face!

I wish you could all sit down at this lovely table and visit with me!  But since you can’t, please know that you can create the same or similar tablescape with almost no effort at all.  Try to use what you have but you can always buy cute accents and charming little lemon napkins to add a touch lemon.

If you’re a regular reader, you know that we’ve lived here 7 1/2 months and built this home. All the landscaping is simple and new. My flowers and plants are just babies and newly-planted so I don’t have the mature garden that I dream of…not yet. I just received my back patio furniture last month. You can read all about it HERE and find all the sources.

I’ve been loving eating on our back patio most spring and summer nights so far.  Weather and insects did not permit that in Texas so we are really loving the Pacific Northwest for that alone.

I thought it would be the perfect time to invite just a few girlfriends over for an intimate dinner on my patio instead of going out.

Y’all know I love to set a table and I also love pink. I’ve been obsessed with lemons, this season especially, so a “pink lemonade” theme sounded fun and summery.

A simple lemon cake from Trader Joe’s with some flowers and lemon garnish was easy and delicious.

Last year I made a fruit and floral arrangement with limes that I loved so much so I thought it would be fun to try something similar with lemons for a quick and easy centerpiece.  See the tutorial I used HERE.

Pink roses and carnations were inexpensive and the only pink flowers at Trader Joe’s (ha!) so I did a fun little mix of those in the center and then sliced lemons around the inside of the hurricane and vase.

I clipped lemons from a faux lemon branch and hot glued them to some leaves to make a cute little decor piece for the middle of each plate.  You could even tie their name, written on a strip of paper, on the lemons as a place card.

All sources are linked below in the “Shop The Post” section except for the trays and hurricane.  Those were fun items I found at HomeGoods and couldn’t find the same ones online for you but linked similar items.

Speaking of HomeGoods….I was in there last month and found the cutest scallop planter pot.  I knew it would be perfect for my lemon tree so I brought it home.  I can’t wait for lemons to grow off those little branches!  I have fond memories of going to my grandparents’ home and always picking fresh lemons for homemade lemonade and for lemon water and lemon recipes.  I found a matching smaller pot last week so I’m going to grow blueberries in there. And check out my hydrangeas!  They are blooming and growing….Woohoo!!

We purchased a gray and white striped bistro awning to cover the rest of the patio BUT the guys are still swamped and haven’t gotten to it, ugh. Can’t wait to show that to you when it’s been hung.

We still have a LOT to add to our back and side yards.  Play area for the kids, a garden, fruit trees, a lounge area, fire pit, fairy garden and more.  But I did manage to get my husband a really fun Fathers’ Day gift….

I designed it and made it with the help of my mom, who happened to be in town, and a couple of young men to bring some muscle to the project.  I’m hoping to get the tutorial done this week and on the blog so stay tuned!  My husband was soooo surprised and loved it so much.  Here is my son, Beckham, testing it out.

I’m so excited that the Seasonal Simplicity series is back again; and this time it’s to celebrate Summer! Welcome to those of you who might be here for the first time!  So glad you could stop by and hope you will, time and time again!  Today I’ve joined up with a talented group of bloggers to share our summer recipe ideas and I’m sharing one of my new favorite recipes with you, a luscious lemon curd parfait!

My mom is in town visiting and, not only is her favorite color yellow, but she loves anything lemon and has made so many delicious lemon desserts since I was a child.  We went to the Farmer’s Market the other day, as we do each Saturday after Beckham’s soccer games, and picked up fresh organic lemons and the most beautiful bouquet of lemon flowers.  So fitting for her visit, don’t ya think?!

I told my mom that I wanted to make a lemon dessert for our family on Sunday after dinner and she was excited.  Perfect timing for this blog post.  (See this post for more details on our kitchen.)

I would call this a semi-homemade recipe and it’s not only sooooo easy but it’s soooo delicious!!

Cake:

•We prepared a moist white cake from Betty Crocker.  Easy peasy!  Just omit 1 of the 3 eggs and only use 2.  It makes it more dense when you only use 2 eggs.  We also added 2 TBSP of fresh lemon zest.  Bake as directed, cool, and then cut into little squares.

Lemon Curd:

•1/3 cup granulated sugar
•1/3 cup fresh lemon juice
•2 tsp lemon zest finely grated
•2 large eggs room temperature
•1/4 cup butter room temperature

1. In a small saucepan, combine sugar, lemon juice, lemon zest, and eggs.
2. Add the butter and cook over low heat, stirring continuously with a whisk, until the first bubble appears on the surface of the mixture and the curd is thick enough to hold marks of the whisk, about 6-8 minutes.

3. Strain the lemon curd through a fine-mesh strainer if you don’t want the lemon zest in the curd. Transfer the hot lemon curd to a bowl or jar and cover the surface with plastic wrap. Refrigerate until cold, then take off the plastic wrap and replace with a lid.

4. The curd keeps fresh in the refrigerator for about 1 week.

Whipped Cream:

•We used whipped cream from a can for this simple recipe but y’all know how much I love homemade whipped cream (with Mexican Vanilla for an unbelievably delicious kick) so I highly recommend it if you want a homemade option.

Layer the cubed cake pieces, a light layer of lemon curd, and whipped cream.  Repeat those layers and then add extra whipped cream on the very top.  Add a lemon slice and some mint for garnish and serve.

Remember that scene from What About Bob where Bill Murray is eating and making sounds while he was eating?  That was our family while eating this luscious lemon curd parfait, haha!  We were like “ohhhhh wow, oh this is so good”, and so on.  Hilarious!  But that’s how good it was!  The sweet tart lemon curd was so delicious in between that cake and whipped cream.  It was heavenly!

As soon as I made the first parfait, I had to taste it and oh WOW….it might be my favorite lemon dessert ever!  And it’s just the perfect size.  Mom loved it so much too.  I found this darling melamine lemon platter at HomeGoods.  I even found this darling lemon kimono HERE for the occasion.  You can find these darling glasses HERE and spoons HERE (or similar here).  Vase is found HERE.  Other dishes are vintage milk glass with gold-rimmed edges. Far left bowl is from HomeGoods too.

Other ideas for using your leftover lemon curd:

-spread it on toast

-top ice cream

-use it as a filling in a cake

-stuffed cupcakes

-filled donuts

-top pancakes

-throw it in a pie shell and top with whipped cream

-fruit dip

-Stir into plain Greek Yogurt and top with granola and/or fruit

-Fold into whipped cream and top a cake with it

-Top a bagel or breakfast pastry

-Fill crepes

-Spoon a bunch on top of softened cream cheese and serve with crackers
