Don’t you just love a yummy cold drink on a hot summer day?!  Me too!  A group of friends and I are sharing our Summer Drink Recipes today so get ready to pin everything that makes your mouth water.  I’m sharing my Frozen Peach Pineapple Strawberry Virgin Bellini that the entire family can enjoy!

Any frozen drink that consists of my three favorite fruits is automatically a winner in my book.  I love peach season so much!  My Peach Meringue Pie is killer and a favorite on the blog and also my Cinnamon Baked Peaches.  

This recipe is basically a can of frozen pineapple juice, Sprite (I had the zero sugar on hand but you can get the regular), fresh peaches & strawberries & pineapple and ice.

You blend it all together and it’s done.  My kids love it and it’s a great way for them to get lots of servings of fresh fruit in a day!

Frozen Peach Pineapple Strawberry Virgin Bellini

Prep Time 10 minutes minutes

Servings 4 people

Ingredients

• 1/2 lb strawberries fresh or frozen
• 4 peaches, peeled and sliced fresh
• 1 cup pineapple, cut into chunks fresh
• 5 cups Lemon-Lime soda chilled
• 1 can frozen pineapple juice concentrate
• 1-2 cups ice *may not be necessary or much not needed if using frozen strawberries
• honey or sugar to taste *optional if you like it sweeter

Instructions

• Add peaches, frozen pineapple juice, soda, and strawberries and blend.
• Then add pineapple chunks and ice and honey or sugar. Serve immediately! If not serving for 5 minutes or 30 minutes, you can put in freezer and then blend for 3 seconds again right before serving.
• Garnish with pineapple slice and/or umbrella. Enjoy!

Welcome, friends!  I’m so thrilled you’re here!  The Seasonal Simplicity Summer series is back today; and this time we’re sharing all kinds of free printables for summer! I hope you enjoy these!  I have a fun printable recipe card for my homemade pink lemonade recipe.  I know you’ll just love it as much as my family and I do.  It’s the perfect summer drink to cool off and quench your thirst on a hot day!

I love summer recipes!  Popsicles, ice cream, and anything else that cools me off.
I especially love all things lemon in the summer.

I recently made a Pink Lemonade Chiffon Naked Cake that is to die for!

Then my mom came into town and suggested we make these Lemon Curd Parfaits and wow….they were so divine.

  I also set the cutest Pink Lemonade themed outdoor table for dinner with a few girlfriends last week.  Read all about that HERE if you haven’t yet seen how it turned out.  It was pretty fun and so cute to put together.

I served pink lemonade at that dinner but it was bottled pink lemonade.  It was tasty but as I was taking a sip, I was thinking how much I’d rather have been drinking a homemade pink lemonade. It’s the easiest recipe ever so I wanted to share it with you today.

Recipe:
9 cups water
1 1/2 cups white sugar
2 cups fresh lemon juice
3/4 cup cranberry juice, chilled

Directions:
In large pitcher, combine all ingredients and stir until sugar is completely dissolved.
Pour over ice and add lemon slice or mint for garnish and serve. Enjoy!

*Variation: To make sparkling lemonade, use club soda instead of water.  Also, you can always make a simple syrup with the sugar and water first on the stove and then mix it in with the other ingredients so that you don’t have to wait for all the sugar to dissolve.

I made a darling printable pink lemonade recipe card for you to give a friend if they want your recipe (because they will…it’s that good).

I also had another idea….

I have a bunch of these cute little milk bottles with lids in one of my cabinets.  I thought it would be fun to fill them with my pink lemonade and run them over to a few neighbors or friends for fun.  It’s something other than cookies and I thought they’d like it.

I also remembered that I had recently bought some yummy lemon saltwater taffy in bulk at our grocery store and thought it would be cute in a small clear bag with the bottle of homemade pink lemonade.  I wish I had taller bags but this is what I had on hand and I have a ton of them. You could buy the taller bags if you wanted to do the same thing.

I just punched a hole in the cute printable and tied it with a pink double-sided satin ribbon around the top of the bottle.  Fun right?!  I had all of this at home already so I always get excited when I realize I can actually put to use the things I hoard save for just the right moment…ha!  They were a hit!

This homemade pink lemonade recipe is also the perfect drink to make and serve out by the pool or just outside to kids and friends. This was a hot day and so, while in my swimsuit and coverup, it was the perfect thing to bring out to everyone playing in the water!

I’m so excited that the Seasonal Simplicity series is back again; and this time it’s to celebrate Summer! Welcome to those of you who might be here for the first time!  So glad you could stop by and hope you will, time and time again!  Today I’ve joined up with a talented group of bloggers to share our summer recipe ideas and I’m sharing one of my new favorite recipes with you, a luscious lemon curd parfait!

My mom is in town visiting and, not only is her favorite color yellow, but she loves anything lemon and has made so many delicious lemon desserts since I was a child.  We went to the Farmer’s Market the other day, as we do each Saturday after Beckham’s soccer games, and picked up fresh organic lemons and the most beautiful bouquet of lemon flowers.  So fitting for her visit, don’t ya think?!

I told my mom that I wanted to make a lemon dessert for our family on Sunday after dinner and she was excited.  Perfect timing for this blog post.  (See this post for more details on our kitchen.)

I would call this a semi-homemade recipe and it’s not only sooooo easy but it’s soooo delicious!!

Cake:

•We prepared a moist white cake from Betty Crocker.  Easy peasy!  Just omit 1 of the 3 eggs and only use 2.  It makes it more dense when you only use 2 eggs.  We also added 2 TBSP of fresh lemon zest.  Bake as directed, cool, and then cut into little squares.

Lemon Curd:

•1/3 cup granulated sugar
•1/3 cup fresh lemon juice
•2 tsp lemon zest finely grated
•2 large eggs room temperature
•1/4 cup butter room temperature

1. In a small saucepan, combine sugar, lemon juice, lemon zest, and eggs.
2. Add the butter and cook over low heat, stirring continuously with a whisk, until the first bubble appears on the surface of the mixture and the curd is thick enough to hold marks of the whisk, about 6-8 minutes.

3. Strain the lemon curd through a fine-mesh strainer if you don’t want the lemon zest in the curd. Transfer the hot lemon curd to a bowl or jar and cover the surface with plastic wrap. Refrigerate until cold, then take off the plastic wrap and replace with a lid.

4. The curd keeps fresh in the refrigerator for about 1 week.

Whipped Cream:

•We used whipped cream from a can for this simple recipe but y’all know how much I love homemade whipped cream (with Mexican Vanilla for an unbelievably delicious kick) so I highly recommend it if you want a homemade option.

Layer the cubed cake pieces, a light layer of lemon curd, and whipped cream.  Repeat those layers and then add extra whipped cream on the very top.  Add a lemon slice and some mint for garnish and serve.

Remember that scene from What About Bob where Bill Murray is eating and making sounds while he was eating?  That was our family while eating this luscious lemon curd parfait, haha!  We were like “ohhhhh wow, oh this is so good”, and so on.  Hilarious!  But that’s how good it was!  The sweet tart lemon curd was so delicious in between that cake and whipped cream.  It was heavenly!

As soon as I made the first parfait, I had to taste it and oh WOW….it might be my favorite lemon dessert ever!  And it’s just the perfect size.  Mom loved it so much too.  I found this darling melamine lemon platter at HomeGoods.  I even found this darling lemon kimono HERE for the occasion.  You can find these darling glasses HERE and spoons HERE (or similar here).  Vase is found HERE.  Other dishes are vintage milk glass with gold-rimmed edges. Far left bowl is from HomeGoods too.

Other ideas for using your leftover lemon curd:

-spread it on toast

-top ice cream

-use it as a filling in a cake

-stuffed cupcakes

-filled donuts

-top pancakes

-throw it in a pie shell and top with whipped cream

-fruit dip

-Stir into plain Greek Yogurt and top with granola and/or fruit

-Fold into whipped cream and top a cake with it

-Top a bagel or breakfast pastry

-Fill crepes

-Spoon a bunch on top of softened cream cheese and serve with crackers
