I’ve been sharing a lot of my favorite fall recipes here lately on the blog.  This last weekend, I asked my oldest, Brooklyn, if she wanted to learn to make our family caramel recipe and make popcorn balls.  She happily accepted and we wanted Beckham to get in on the fun with us but he was, as usual, out riding his bike around the neighborhood with friends. However, he had no problem coming in afterwards and enjoying the treats we’d made.  So here it is….the yummiest and easiest caramel popcorn balls ever!

This recipe actually comes right out of my mom’s handwritten recipe book, that I treasure, and is my Great Uncle Walt’s caramel recipe.  He was a hoot.  I’m not quite sure about the story behind this recipe so I need to ask her but we have been making this particular recipe for as long as I can remember.

Just remember….after you lick this delicious caramel off your fingers, you must wash your hands before making more caramel popcorn balls!

Doesn’t that look soooo yummy?!  It is!!!

They are so gooey and chewy and perfect but let them sit and harden a little before you wrap them up and give them away OR serve them to your friends and family so that they don’t fall apart!

I like to serve them stacked like this OR I’ll tie them in individual clear halloween bags with a little ribbon and give them away to friends.  Hope you love these as much as we do!

You can also stop after stirring the caramel and popcorn together and just bring the large bowl of caramel popcorn over to your people and let them dish some into individual bowls!

One of my favorite things about fall is all the delicious foods we get to enjoy that we don’t tend to make any other time of the year.  Today you’re in for a treat because a group of us are sharing some of our favorite fall appetizers.  Holiday entertaining has never been easier!  Thanks so much to Kristen from Ella Claire Blog who brought us together for this fall and winter series of delicious recipes.  I’m sharing my Cranberry Almond Mini Cheese Ball Bites recipe today and it’s so easy and sooooo delicious.  We may or may not have eaten them all for lunch the other day.  My family loves this recipe!

I have to say 2 things…..

First, I have a kid who doesn’t love cheese (I know, how is she mine right?!) and she LOVES this recipe.

Second, there’s nothing worse than going to a blog post for a recipe and there is the looooongest story or useless info and you keep scrolling and scrolling for the recipe because you want to make it right that very minute.  Haha!  That happens to me every time!  So let’s get to it!

Ingredients:

• (2) 8 oz packages cream cheese, softened
• 4 oz sharp cheddar cheese, grated (I choose the shredded kind in a bag and then chop them quickly to make them even smaller OR you can grate the cheese yourself on the smaller opening)
• ½ cup chopped dried cranberries (I quickly chop them up a little smaller as some brands have larger sizes)
• ½ cup finely chopped almonds (slivered or sliced is fine too and then chop them smaller)
• 1/2  cup thinly sliced scallions
• 1/3 cup canned crushed pineapple with all juice squeezed out of it

Coating:

• ½ cup finely chopped almonds
• ½ cup chopped dried cranberries
• 30 pretzel sticks

Instructions:

1. Combine the ingredients in a large bowl, stirring until combined.
2. Use a cooke scoop to scoop out small balls.
3. Roll into a ball using your hands.
4. Place almonds and cranberries into a separate, shallow bowl.
5. Roll the cheese balls into cranberry-almond mixture and spear with a pretzel stick.
6. Refrigerate until ready to serve.
7. If preparing more than 4 hours in advance, don’t add the pretzel sticks until ready to serve.
8. Serve with assorted crackers and pretzels.

 

We love thin wheat crackers in our home so I always serve them with my mini cheese balls but when having guests, an assortment is nice also and even some gluten-free crackers for those with intolerances.

It takes me about 15-20 minutes to make these and they are always a crowd favorite!

Fall Front Porch

It’s just now starting to cool down here in the Pacific Northwest.  I still loved my front door wreath from spring and summer so I added mini white pumpkins and switched out some florals to turn this into the perfect little fall wreath for my front door.  I kept my fern in their white planters too since they matched my wreath and I can’t make my pumpkin urn topiary until I get some much bigger white pumpkins.

It’ll be another couple of weeks until all the farmers open up their farms for hayrides and fun but I found a farmer nearby who had a handful of white pumpkins they were willing to let me take.  I was so thrilled!

Fall Entry

There are so many pretty ways to style pumpkins.  In my front entry, I decided to grab a bunch of sparkly, glass and velvet pumpkins, as well as some pretty faux fall roses to create a lovely romantic fall vignette.

I also added small touches of fall with fall votive candles and small ceramic pumpkins to my cozy faux fur settee in the front entry.

I love this dress!  It’s the perfect dress for taking you into the fall because you can roll up the sleeves or keep them down for extra cool days.  I wore it to church recently and then came home to get baking.  Fall is my favorite because I immediately pull out my fall recipes and make all of our favorite things and try new ones as well with fresh pears, apples, and peaches…..and then pumpkin puree.  They all make the best treats and the house smells amazing.  We’re so lucky to live around so many local farms where we can find the best produce and pick it ourselves too.

I love to bake on most Sundays after church and cook a big family dinner. Come into my kitchen and let me tell you more!

Fall Baking

On any Fall Sunday, I’ll kick off my heels and change into a comfy sweatshirt and sweatpants and get baking.  This Diet Coke sweatshirt is soooo comfy and my new favorite sweatshirt lately.  I have another few comfy favorites I’ll share at the end of this post as well in my “shop the post” section, so make sure to look for that.

One of our favorite fall desserts is my Apple Peach Crisp with vanilla ice cream.  It is sooooo delicious and your house will smell amazing while it’s in the oven!

Our other favorite is this Pumpkin Spice Waffle Dessert Bar because they’re soooo yummy…

…AND you can also make them into dessert sandwiches or even ice cream sandwiches.  They’re so simple and your family and friends will go crazy over them!  Even our friends who don’t care for pumpkin-flavored treats love this recipe!

Fall Kitchen & Dining

I made very small but elegant fall touches to my dining table and kitchen.  Mercury glass pumpkins are always a perfect thing to use on a tray with maybe a fall candle and some fresh flowers.

I love when you can find eucalyptus in the stores this time of year to add to your fresh flowers.  Then you know it’s fall.

Another subtle touch is adding your white pumpkin soup tureens and other like-pieces to your glass cabinets.

Fall Mantel & Living Room

I kept the mantel simple for fall this year.  With our television above the fireplace, I have learned to decorate around it but I also wanted to create a blush pink glam fall mantel and take out all the blues I had added in this space earlier this spring and summer.

On the other end I used these pretty candles with my DIY blush glam fall candle wreaths and I love how it all came together.  I also swapped out pieces on coffee table for new blush vases and a pretty pumpkin.

Instead of blush pink and blue pillows, I removed the blue (don’t worry….I’ll be using blue again soon, hint hint) and added beiges to bring in a cozier feel with the blush pinks.  I’m really liking it.  It immediately warms things up and is a lovely look for the fall.

Faux fur throw pillows and throw blankets are a fabulous way to add a cozy touch for fall and an extra touch of elegance.

Fall Master Bedroom

One of the best things about fall is getting nice and warm in some comfy fall pajamas.  I’m not much of a flannel girl but I do love some soft fuzzy pj’s or something like this gorgeous satin top and bottom.  If they’re pretty in pink, it’s a no-brainer for me.  I had to have these when I saw them.  I’m obsessed. Can I just live in these all fall?  They’re best for catching up on work before bed with a lit candle and then watching some of our favorite shows.

Today we’re all back and we’re bringing your our yummiest fall pumpkin recipes, thanks to our friend Kristen at Ella Claire Blog, who decided to host this tour and get us all together.  My family isn’t complaining because they know how much I love fall baking and when I told them I was going to be making and sharing my Pumpkin Spice Waffle Recipe + Dessert Bar, they shouted “hooray!”

Waffles are more than just a breakfast food.  You can use them for all sorts of sandwiches and even for desserts.  With the way we load these pumpkin spice waffles up with toppings, it may be more appropriate for a dessert.  But you can definitely use this recipe for your breakfast waffles!

One of my favorite things about being in the kitchen is pulling out all of my pink kitchen accessories.  They just make me smile.  Then I turn on music and it’s a full-on party!

Ok let’s get to the recipe…

Pumpkin Spice Waffle Recipe

Pretty simple, right?!  Here’s where the fun part comes in

Heart-shaped Waffles

Ever since I bought a heart-shaped waffle maker, we have had a lot of fun with it.  If you’re using one of these too, use your kitchen scissors to quickly and carefully just cut down the “seam” and separate the waffles into individual hearts.  Trust me, this is sooooo quick and easy and they look much neater and won’t rip or look sloppy.

If you’re using a regular waffle maker, just cut them on the seam into quarters.  Then, arrange your waffles on a platter.  You can just serve whole waffles without cutting them apart, but if you’re making them into fun little waffle dessert sandwiches (I’ll show you that below) it’s nice to have smaller pieces.

Pumpkin Spice Waffles Toppings

If you’re trying to be healthy, choose healthy toppings.  This is a dessert bar so I pick a lot of fun toppings and we get crazy.

I like to toast coconut for one of the toppings.

I also love the taste of toasted pecans.  It’s especially perfect for this season and I’ll add a smidge of cinnamon and sugar.

We like to pull out the cookie butter and milk chocolate chips (shown above).  Other toppings we’ve used are Nutella, chocolate or caramel syrups, mini M&M’s, crushes Oreo’s, chopped up Snickers or other candy bars, carob or white chocolate chips, slivered almonds, ice cream…the list goes on.  Choose whatever sounds good or whatever you have!  That’s the FUN of it!

You can pull out maple syrup or other pancake syrups.  I also whip my own whipped cream (with Mexican Vanilla – my favorite).  For a quick and easy alternative, you can also use whipped cream out of a can.  I just like to go all out for this!

Pumpkin Spice Waffles Dessert Bar

Now all you have to do is grab plates and flatware (and maybe some pretty napkins or centerpiece too) and put it all out on the counter or table and arrange it for your family and/or friends.

They are going to love it!

How to eat your Pumpkin Spice Dessert Waffles

You can either eat your waffles, layered on top of one another (as people normally do) and add all of your toppings.

OR

You can make a waffle dessert sandwich.

Add all of your toppings on to the bottom piece.

Take another waffle piece and sandwich it on top.

There you go.  It’s that simple.  If you wanted to spread on softened ice cream and make ice cream sandwiches, you could stick them back in the freezer for 30-60 minutes and serve.  There are endless possibilities for these little Pumpkin Spice Waffles but one thing is for sure…..

No matter which way you eat them, they are absolutely delicious!  Everyone will love them. Our friends that don’t particularly love pumpkin-flavored desserts LOVED these because the pumpkin flavor is just enough and not overwhelming.  It’s the perfect fall dessert!

Oh how I love the Fall!  Here in the Pacific Northwest, we have the most beautiful Fall weather and the scenery is unlike anything I’ve ever seen.  Saturdays are filled with soccer games of my son’s and then watching collegiate football too. But the fall baking is my favorite! I love the sweet aromas of fruits, pumpkin, and spices filling our home and the squeals from my family as I announce that the baked goods are fresh out of the oven.  Today I’m joining a bunch of talented blogger friends, and amazing bakers and cooks, to share with you our apple recipes for the fall.  A special thanks to our friend Kristen from Ella Claire Blog for getting us together for her Fall Recipe Series!

Simple & Delicious Apple Peach Crisp

On Instagram and Facebook the other day, I asked everyone what they thought I was going to be sharing this week…which recipe.  Apple pies and crisps and even cookies were some of the guesses.  They were close BUT they didn’t quite guess right.  I’m glad we all think apple for the Fall though.  I was actually wanting to make an apple peach cobbler but at the last minute I decided I wanted to do a crisp.  It’s quicker to make and I hadn’t made a crisp in a while.

Peaches are my favorite!  I have shared my Cinnamon Baked Peaches and also my Peach Meringue Pie on the blog.  But apples are another favorite and together, well…..it’s the perfect marriage!  Apple Peach Crisp is so delicious and the aroma in my house is…..WOW!  They need to make a candle of it!  Ha!  Ok, let’s get to the recipe.

Ingredients:

Instructions:

1. Preheat oven to 375 F
2. Cut fruit and combine in bowl
3. Sprinkle fruit with lemon juice and cinnamon and white granulated sugar.  For best results, place back in fridge for one hour to let the sugar and fruit create more juices.
4. Pour fruit into large baking dish or 2 smaller dishes (I actually split mine into 2 pink pie dishes)
5. Combine brown sugar, oats, and flour in a bowl, pour over fruit
6. Cut and crumble 3/4 cup of butter on top of the flour mixture (split if you’re doing 2 dishes)
7. Melt the remaining butter in microwave and drizzle over the top of your 1 dish (or split for 2 smaller dishes)
8. Bake for 35 minutes or until topping is brown and fruit is soft

We love using our apple corer and slicer. It’s so quick and the kids think it’s fun.

It’s that easy!  Now, grab some vanilla ice cream and serve!  It’s quite delectable.

Question….Is it ok to eat this for breakfast?  I may or may not have done that.  And yes…with ice cream.
