One of my most FAVORITE things about fall is pumpkins! I don’t mean just to decorate with pumpkins but pumpkin recipes. That’s why I’m so excited about today’s post! My friend Kristen from Ella Claire Blog is hosting a series of seasonal recipe hops and today we are all gathering to share our pumpkin recipes. Whether you’re watching your carbs or not, my family will agree that everyone loves my delicious Keto low-carb pumpkin muffin recipe!

Since January, I’ve been back on my low-carb lifestyle and it feels sooo good! I’ve lost a lot of weight and my cholesterol levels are better but I also feel so much better too.
As good as that is, there is nothing worse than fall coming and then the holidays and not being able to eat all the fun foods. I refuse to let that happen! Those were the days! So I have LOTS and lots of yummy recipes I love and this is one of them.
It’s as easy as mixing all the ingredients together and throwing into cute baking cups and into the oven!
Here’s the recipe below!
- 1/2 cup almond flour
- 1/2 cup coconut flour
- 2/3 cup monk fruit sweetener
- 1 tbsp baking powder
- 1 tbsp pumpkin pie spice
- 1/4 tsp salt
- 1 tsp cinnamon
- 4 eggs
- 3/4 cup pumpkin puree
- 2 tbsp melted butter or ghee
- 1 tsp vanilla

Preheat oven to 350º F.

Mix dry ingredients and then add wet ingredients and mix well.

Fill muffin cups 3/4 way and bake 25 minutes. Cool for 10+ minutes and enjoy!

Only 3.7 net carbs and 98 calories per muffin!
Optional add-ins:
Flax seed, Sugar-free chocolate chips (I like the Lily's Dark Chocolate baking chips that are sweetened with stevia...so good!), chopped pecans. Readers have loved these and given great feedback! Leave me a 5-star rating and comments below if you loved these. I'd love to hear from you!

They’re the perfect moist pumpkin muffin and they don’t have a funny or weird diet taste! I’ve had guests eat them and have no idea they were low-carb. I just love that!

Do you have nutritional info for the pumpkin muffins? Carbs, calories ?

Hi Kathy! I put in there that they’re 3.7 net carbs per muffin (at end of recipe). But I don’t usually count calories when I do Keto, just carbs… so sorry! I can figure that out though and make an update! Give me a few minutes and I’ll do that! xo

What is monk fruit sweetener and is there something else that can be used as a replacement?

Hi Deb! Great question! It’s a natural sweetener. I avoid aspartame, Splenda, etc. The harmful effects are not worth it to me and I gave them all up the beginning of the year. You can substitute them if you wish and look up the ratio to replace them if you’d like. But here’s a link for more info on monk fruit and you can use stevia if you want too. I prefer the taste of monk fruit.

Oh these were SO delicious! My 3 year old even liked them and wanted another…that’s saying a lot. I added flaxseed and chocolate chips and it tasted delicious. I also added a little bit of apple cider vinegar just to help out the baking soda. This is definitely in my saved file! Thank you!
